I am going to say this now and this is 100% an unpopular opinion but I am not a dessert person. I’d rather get an amazing savory dish and then just some coffee to finish the meal than a decent savory dish and a good dessert. It has always been like this and the more I age the more I get far away from desserts. I struggled to find a recipe for today’s last vegetarian christmas dinner menu series because there aren’t many “christmas desserts” out there that I truly fancy. However, I kinda went back to the basics and that’s when I thought of this trio of fruit parfaits to finish off on a super sweet note.
For 2020 I set up a goal to improve my baking skills and be able to make those desserts that I really enjoy. You will be seeing some more baking – if I don’t fail at it- next year. Now, let’s get down to business and see how to prepare this amazing trio of fruit parfaits for christmas dinner.

Trio of fruit parfaits: Ingredients
I am making three different parfaits, apple, banana and kiwi. For each, I made 1 serving so if you want to double them aka prepare 6 parfaits, 2 of each, double the quantities (and so on and so on).
Greek yogurt base
I used a big batch and then divided approximately between the trio of fruit parfaits:
- 480g of greek yogurt
- 2 tbsp maple syrup
- 1 tbsp vanilla extract
Apple parfait:
- 160g of greek yogurt base (a bit more than 1/2 cup)
- 1 tbsp butter (sweet)
- 2 apples
- 1 tbsp cinnamon
- 1 shortbread cookie (crushed)
Banana and peanut butter parfait:
- 160g of greek yogurt base (a bit more than 1/2 cup)
- 1/2 cup crushed cookies (shortbread preferably)
- 1 tbsp peanut butter
- 1 banana
Kiwi and walnuts parfait:
- 160g of greek yogurt base (a bit more than 1/2 cup)
- 1/2 cup crushed cookies (shortbread preferably)
- 3 small kiwis or 2 medium ones
- 1/2 teaspoon brown sugar (optional)

How to prepare this trio of fruit parfaits?
To make this trio of fruit parfaits, we are going to start by making the base, aka the yogurt. I made all the yogurt base at once: Take the greek yogurt, add the maple syrup and vanilla extract and mix well. You want the yogurt to maintain that greek yogurt consistency, you don’t want it liquid.
Apple parfait
We are going to cook a bit our apples. In a non-sticky pot, add the butter and the chopped apples. Add the cinnamon and mix well. Cook for about 5 minutes at medium heat.
Banana and peanut butter parfait
You don’t need to prepare anything out of the ordinary. In a bowl, mash the bananas and mix it with the peanut butter. Leave a couple of banana slices unmashed for decorative purposes.
Kiwi parfait
Cut a couple of kiwi slices for decorative purposes, dice the rest and mix them with a bit of brown sugar. My kiwis were particularly acidic so that’s why I added a bit of sugar.
Trio of fruit parfaits: the layers
Each parfait will be composed of:
- A thick layer of yogurt
- A layer of fruit
- A layer of crushed cookies
- Another Layer of yogurt
- Another Layer of fruit
- Topped with crushed cookies and a bit of remaining fruit
Once this is done, you can either serve them or store them in the fridge by covering them with a lid (my pots come with a lid) or with some wrap. You can totally prepare them the day before.

Other combinations for your possible trio of fruit parfaits
This is a pretty straightforward dessert and one that you know people will enjoy. If you want to go for other combinations, here are some ideas:
- Oreo parfait: Switch the fruit for some crushed oreos.
- Mixed berries and oats parfait: Some raspberries, blueberries and a bit of oats instead of my fruits and the shortbread crumble.
- Chocolate parfait: Switch the yogurt for some chocolate mouse and add some more cookie crumbles. You can top this one with more chocolate or smores!
- Pineapple parfait: Kinda similar to the ones I made, but with pineapple.
- Cheesecake parfait: Instead of using a yogurt base, you can go for some mascarpone base. Add some crumbles at the bottom, add the mascarpone and top with some raspberries.

Trio of fruit parfaits
Ingredients
- 480 g Greek Yogurt Unsweetened
- 2 tbsp maple syrup
- 1 tbsp vanilla extract
- 2 apples Golden
- 1 tbsp cinnamon
- 1 tbsp butter Sweet
- 1 banana
- 1 tbsp Peanut Butter
- 3 small kiwis
- 1 teaspoon brown sugar
- 3 shortbread cookies crumbled
Instructions
- To prepare the yogurt base: Mix all the yogurt with the maple syrup and the vanilla extract. Set aside.
- To prepare the apples: Melt the butter in a non-stick pot and add the chopped apples with the cinnamon. Cook for about 5 minutes at medium heat.
- While the apple cooks, cut a couple of slices of the banana and mash the rest. Mix the mashed bananas with the peanut butter. Set aside.
- While the apple cooks, cut a couple of kiwi slices and dice the rest. Mix them with a bit of brown sugar if they are too acidic. Set aside.
- Crumble the shortbreads, either manually or with a food processor. I did it manually.
- To prepare the parfaits: Put a layer of yogurt, followed by a layer of fruits, then a layer of shortbread. Add another layer of yogurt, then fruit, then top with the decorative pieces of fruit and more shortbread crumble.
