Instant Pot Basics: Soft Mashed Potatoes Recipe

A couple of months ago I wrote a post to help Instant Pot newbies get a bit comfortable with their new kitchen tool, and also help them decide whether the Instant Pot would be a good fit for them or not. As a follow up to that post, I want to start sharing “basic” recipes to make in the Instant Pot and that are fail-proof (most of the times) and easy to follow. Today’s recipe is no other than a super soft, creamy mashed potatoes recipe.

Ingredients

There are two categories of ingredients for this recipe: the basics, and those which will elevate the flavor profile of your dish.

  • Potatoes
  • Water
  • Salt & Pepper
  • Butter
  • Plant-based milk or cream

If you want to take them to the next level:

  • Garlic
  • Butter

How to make this Instant Pot Mashed Potatoes Recipe?

To make this recipe in the Instant Pot, we will start by cutting the potatoes in chunks. We will cover those potatoes with water (around 6 cups, but this is an estimate, it changes every time I make mashed potatoes). Just make sure you cover the potatoes with water. We will add some salt and then we will close the lid.

The water levels

We will set the valve to sealing and then we will cook the potatoes for 10 minutes. The Instant Pot will take around 10-15 minutes to reach pressure. When the timer starts, we can start making our garlic butter.

To do this garlic butter: in a pot, add the butter and melt it at low temperature. Add the garlic and let it simmer for around 20 minutes, stirring every now and then.

When the Instant Pot timer reaches 0, we will do a Quick Release (QR) very carefully. Turn the sealing valve to venting and let the steam come out. When it’s safe to do so, we will open the lid and drain the potatoes.

Then we will add the plant-based milk or cream to the mix, and we can start doing the mashing!

Pour the garlic butter and continue mixing until you reach a very soft consistency. Add some salt & pepper according to your taste and enjoy!

How to eat these mashed potatoes?

Honestly, the possibilities are endless. You could

  • Sauté some quick vegetables with tofu and eat it all together.
  • Used them to make some sort of vegetable pie
  • Eat them like loaded potatoes

And if not, you can just eat them like so (I have done that… maybe… maybe not).

Equipment

  • Instant Pot

Ingredients

  • 1 kg potatoes (Around 6-8 medium sized potates)
  • 6 cups water
  • 1/2 cup vegan butter
  • 3 garlic cloves
  • 1 cup plant based cream
  • 2 tbsp nutritional yeast
  • Salt and pepper to taste

Instructions

Mashed Potatoes (Instant Pot)

  • Cut the potatoes in big chunks and put them inside the Instant Pot. Add the water cups, the potatoes should be covered.
  • Close the lid, set the valve to sealing and click on manual. Set the timer to 10 minutes. The Instant Pot will take around 15 to 20 minutes to reach pressure. When the timer goes off, do a Quick Release (QR) very carefully. Turn the sealing valve to venting carefully and let the steam come out.
  • When it's safe to open the lid, do so and drain the potatoes.
  • Add the potatoes back to the Instant Pot and now we are going to mash them. Use the plant based milk to make it creamier and once they are properly mashed, add the butter & garlic. Try the mashed potatoes and add some pepper & salt according to your taste.

Garlic Butter

  • In a separate pan, add the butter and garlic and let it simmer for around 20 minutes. You can do this while the Instant Pot cooks the potatoes.
  • Enjoy!

Les basics de l’Instant Pot: Purée de pommes de terre – Recette en français

Ingrédients

  • 1 kg pommes de terre
  • 1.2l d’eau
  • 200g beurre vegan
  • 3 gousses d’ail
  • 250ml crème végane
  • 2 cuillères à soupe de lèvure de bière
  • Sel et poivre pour assaisonner.

Instructions

  • Couper les pommes de terre et les mettre dans l’Instant Pot. Ajouter l’eau jusqu’à couvrir les pommes de terre.
  • Fermer l’instant Pot, vérifier que la sealing valve est bien sur Sealing. Sélectionner le mode “Manual/Pressure cooker” et ajouter le timer à 10 minutes. L’instant Pot prendra entre 15 et 20 minutes à arriver à la pression maximale.
  • Quand le timer est terminé effectuer une Quick Release. Bouger la sealing valve de “sealing” à “venting” pour permettre la vapeur de sortir. Quand la floating valve est descendue, vous pouvez ouvrir l’instant Pot.
  • Egoutter les pommes de terre.
  • Remettre les pommes de terre dans l’Instant Pot et faire de la purée à l’aide d’un presse-purée. Ajouter la crème puis le beurre à l’ail. Assaisonner avec du sel et poivre au goût.
  • Pour faire le beurre à l’ail: Dans une poêle à feu doux, ajouter le beurre et l’ail. Laisser cuire pendant 20 minutes pendant que l’Instant Pot cuit les pommes de terre.
  • Bon appétit!

I am so excited to read these books but except the "for the throne" book, I don't really know what they are about.

I gotta say I was way too excited about this book because it is the first time I can actually buy something from my favourite podcasters without having to pay +50€ of shipping. But that's just a side note. 

🌍What is this book about? As the title says, it's a guide of haunted places in the US :  a mix of paranormal and true crime stories told by Em and Christine and other cool / haunted places to visit in each city/state. 

👻The stories, while obviously dark, are told in a funny way and it goes by like a breeze. I read it like a normal book, but you can totally read it one state at a time and it'd be even greater.

The book is quite original because well, there is a million road trip guides out there but few like this one! 

🔥I'm a huge fan of ATWWD so i may be a bit biased, but nonetheless this was great and entertaining and I really want to do a freaking road trip now!

Some very good books but some very bad ones too in January. My fave read was "Le refuges" by Jérôme Loubry, such a Great thriller. 
The worst was house of accidents, it could have been SO GOOD, yet it was...so bad.

✨Meat & veggie broth✨ Quick recipe with the In ✨Meat & veggie broth✨
Quick recipe with the Instant pot today : this is one of my favourite things to make because you get : awesome broth, awesome meat and veggies, and tons of possible meals out of it. 

To make this easy broth you will need : 
- 2 to 3 different types of meat : I usually get jamón (but in France it's very costly to find good one), chicken legs, beef ribs or beef meatballs). For this one I used the chicken legs, beef ribs and pork belly. 
- veggies: all you want, everyone is welcomed !! I mainly use cabbage, carrots, leek, celery, potatoes. Sometimes I put garlic in there. 
- chickpeas 
- salt and pepperrrrr
- i use a bit of soy sauce to give an extra quick as well. 

Now, put everything in the instant pot, put water till almost the max limit and close the lid. If you making it with meat, go 1h + natural release (up to two hours).
