I have been cooking different stuff these days and I have also been cooking a lot. In a couple of days I will start a new job and I don’t know how much time, nor work I will have. Tofucado is great and I love every bit of it, but I’m a bit scared of not being able to do both. Which is why I have been planning for two weeks. Yay for planning. Since I planned a lot of recipes and cooked a lot, I had to choose which one to publish today. And the chosen recipe was my 30 minute healthy gnocchi spinach casserole recipe.

Ingredients
You don’t need much for this recipe, but you still need a couple of things:
- A handful of spinach, or a bunch of them. How do you even measure spinach? I always throw a lot in there and end up with literally 1g in total, so yeah. Just add a lot, cause either way it will vanish into…nothing.
- Onion: I used a gigantic yellow onion. If you are using smaller ones, I’d say use 2 medium ones.
- A whole other bunch of mushrooms: I know I said this is a spinach casserole but who doesn’t like mushrooms too. I added around 2 cups of mushrooms.
- Gnocchi, gnocchi and more gnocchi. I used “ready to sauté” gnocchi. But if your gnocchi are different, follow package instructions!
- Spices: Garlic powder cause garlic powder rules. Some paprika, and salt and pepper to taste, the usual.
- A bit of tomato sauce.
- A bit of cream. Just to get that extra creaminess.

How to cook this Gnocchi Spinach Casserole?
Super easy as well. As per most of my recipes. I don’t have time for complexity lately.
First, we will cook the onion and the mushrooms. We will add the spinach at the end with the gnocchi. When the onion & the mushrooms are cooked, we will set aside in a bowl.

If you are using the same gnocchi type as me, aka the ones that need to sauté in a pan, you will want to do this first and then mix in the veggies (+ the spinach!).
Once the gnocchi are golden and super appetizing, add in the spinach and the onion&mushroom mix. Mix super well, then add the cream & tomato sauce. Cook for a bit, then serve and enjoy this deliciousness.

Gnocchi Spinach Casserole
Ingredients
- 500 gr Gnocchi 18 oz
- 1 Large onion
- 2 cups Mushrooms
- 2 generous handfuls of spinach
- 1 tbsp Olive oil
- 2 tbsp Garlic powder
- 1/2 tbsp paprika
- Salt & Pepper to taste
- To serve with: Grated cheese or nutritional yeast,… As you want !
Instructions
- Pre-heat a pan and add the olive oil. When hot, add the onion and cook for around 2-3 minutes.
- Add the mushroom and spices and mix well. Cook for about 10-15 minutes. When the vegetables are starting to golden, set aside in a bowl.
- Cook the gnocchi according to package instructions. Mine were to cook them in a pan with some olive oil for around 5 minutes until golden.
- When the gnocchi are golden, add the spinach and the other vegetables (onion and mushrooms) and mix well. Cook for 2 – 3 minutes.
- Add the tomato sauce and cream. Mix well and cook for an extra 3 minutes.
- Serve in a bowl with some grated cheese, or some nutritional yeast and enjoy!
🇫🇷 Gnocchi Spinach Casserole – Version en français
Ingredients
- 500g de gnocchi
- 1 oignon (grande)
- 150g de champignons
- 2 grosses poignées d’épinards frais
- 1 cuillère à soupe d’huile d’olive
- 2 cuillères à soupe de poudre d’ail
- 1/2 cuillère à soupe de paprika doux
- 150g de sauce tomate
- 1 cuillère très généreuse de crème fraîche.
- Pour la dégustation: Du fromage rapé, de la levure de bière, …
Instructions
Étape 1: Pré-chauffer une poêle et ajouter de l’huile d’olive. Ajouter l’oignon et cuire pendant 2-3 minutes.
Étape 2: Ajouter les champignons et toutes les épices et mélanger bien. Cuire pendant 10-15 minutes jusqu’au point les légumes commencent à se dorer. Mettre dans un bol à part.
Étape 3: Cuire les gnocchis selon les instructions. J’ai utilisé des gnocchis à poeler donc je les ai fait cuire pendant 5 minutes avec de l’huile d’olive.
Étape 4: Ajouter les épinards et le mélange d’oignon et champignons et cuisiner pendant 2-3 minutes.
Étape 5: Ajouter la sauce tomate et la crème et mélanger bien. Continuer à cuire pendant 3 minutes.
Étape 6: À servir dans un bol avec un peu de fromage ou de la levure de bière!
