We’ve all watched ratatouille. Except for my SO (he truly needs to get on top of his shit when it comes to Disney movies, and I’m not even a hardcore Disney fan!). And if some of you really like cooking or, ratatouille, you probably noticed that the so-called ratatouille dish served in the movie isn’t, in fact, a traditional ratatouille but rather a confit byaldi. The movie came out in 2007 so I’m not saying anything crazy, many people have noticed this before. But it has always bothered me and today I’m showing you an easy, yet traditional ratatouille recipe.

Ratatouille – Pisto – Caponata ?
I’d also like to mention that ratatouille is a typical french dish, but that many other Mediterranean countries have similar dishes to it. In Spain, we have “pisto” which is made basically out of the same ingredients an in a similar fashion. I believe Italy has something close to it called caponata but they add many other ingredients such as capers, olives, vinegar, … the idea remains the same. I’m sure there are many other countries with something similar to these three dishes!

Ingredients
The ratatouille ingredients are the most vegan friendly ingredients out there.
- Eggplant
- Peppers: Red, green and if you have some yellow, why not. It’s a rainbow of veggies out here.
- Zucchini
- Tomatoes ! the riper, the better
- Onion
- Garlic
- Spices: Thym, bay leaves, herbes de provence, …
- Veggie broth, olive oil, salt and pepper!

How to prepare this traditional ratatouille recipe?
First, we need to cut the crazy amount of veggies we are using. It’ll be much easier after. All veggies need to be diced. I suggest separating them according to their cooking order: 1) onion & garlic, 2) eggplant, 3) peppers & zucchini, 4) tomatoes.

Following the cooking order from above, we will add them to our large pan. First, we will cook the onion & garlic with the spices for around 5 minutes. Second, we will add the eggplants and cook for 7 minutes. Third, we add the peppers and zucchini and we cook for 7 extra minutes.
The last vegetable (or fruit) we are adding: the tomatoes. We add them and then we can add a tiny bit of veggie broth and let it simmer for at least 1h.
The result should be looking like this: If you want it less “saucey”, add less veggie broth. The ratatouille is a great addition to many dishes and I love cooking it in advance because sometimes you can just use some of it afterwards and a dish can be really elevated.

- Couscous with a side of ratatouille and chickpeas
- Pasta with some ratatouille
- Potatoes with ratatouille.
- Polenta with ratatouille ( in a similar style to this recipe)

Delicious and easy traditional ratatouille
Ingredients
- 1 eggplant
- 1 zucchini
- 1 green bell pepper
- 1 red bell pepper
- 1 onion
- 4 garlic cloves
- 4 ripe tomatoes
- 3 bay leaves
- 1 tbsp thym
- 1 tbsp herbes de provence
- 1/2 cup veggie broth
- Olive oil, salt and pepper
Instructions
- Cut all the vegetables first. This will make it easier for you to cook the whole ratatouille. Cut them in big cuts, no need to aim at perfection.
- Add a bit of olive oil to a large pan, when hot, add the onions & garlic. Cook for 5 minutes.
- Add the eggplant, reduce a bit the heat to medium-high and cook for 7 more minutes. Add the spices
- Add the peppers and zucchini and cook for 7 more minutes, reducing a bit the heat to medium.
- Add the tomatoes in the last step and add a bit of veggie broth, you want to create a small layer of "sauce". Top with the bay leaves
- Let it simmer for minimum 1 hour and it is ready.

🇫🇷 Recette en français – Ratatouille traditionnelle et facile
Ingrédients
- 1 de chacun des légumes suivants:
- Aubergine
- Courgette
- Poivron vert
- Poivron rouge
- Oignon
- 4 gousses d’ail
- 4 tomates
- 3 feuilles de laurier
- 1 cuillère à soupe de thyme et une autre d’herbes de provence.
- 125 ml bouillon végétal.
- Huile d’olive, sel et poivre.
Instructions
- Couper tous les légumes en premier. Cela va rendre plus facile la tâche de cuisiner toute la ratatouille de A à Z. Couper les légumes en gros morceaux, pas besoin d’être parfait.
- Ajouter un peu d’huile d’olive dans une poêle. Quand l’huile commence à chauffer, ajouter l’oignon et l’ail. Cuire pendant 5 minutes.
- Ajouter l’aubergine, baisser la temperature un petit peu et cuire pendant 7 minutes.
- Puis ajouter les poivrons et la courgette, baisser la temperature un petit peu et cuire pendant 7 minutes encore.
- En dernière étape, ajouter les tomates et un petit peu du bouillon végétal pour obtenir une consistence avec un peu plus de “sauce”.
- Laisser cuire à feu doux pendant minimum 1 heure et voilà !
La ratatouille est une très bonne base pour beaucoup de plats :
- Couscous avec de la ratatouille et pois-chiches.
- Pâtes avec de la ratatouille
- Pommes de terre rôties avec de la ratatouille.
- Polenta avec de la ratatouille comme dans cette recette)
