People tend to associate cold weather with negative things and often forget the amazing stuff they can do or that comes along with it. Coffee and hot chocolate are just some examples, there are also blankets and cozy moments at home while watching your favorite show or movie. It also means eating a lot, and baking more of my cinnamon apple bread recipe. Apples are a staple and every time I bake this, it’s always a crowd-pleaser. People are happy, I am happy and how couldn’t you be when eating apple bread?

I learned how to bake this cinnamon apple bread by just testing & trying and I finally got to write down an actually recipe, and it was all thanks to one of my friends, who suggested to publish a dessert recipe instead of a savory one (You can thank her later for that if you try and love this recipe!). I am not an expert and my baking skills are probably not outstanding and I did things wrong throughout the recipe. Nonetheless, the result is always good and tasty!

Also, I still haven’t bought mixing bowls for my new appartment, so I used my ramen bowls for it. Who knew ramen bowls could give you the possibility of serving delicious meals such as mapo tofu and also serve as mixing bowls?
Ingredients
- 1/4 cup melted butter
- 3 eggs
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1 tablespoon vanilla sugar
- 5 apples (Golden)
- 1/4 cup chopped nuts
- 2 cups of flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 tablespoon ground cinnamon

Method
Before you start this steps, starting pre-heating your oven at 190ºC/375F.
- In one mixing bowl, add the melted butter, eggs, white, brown and vanilla sugar. Mix well

- Add the apples & chopped nuts. Fold them into the mix.

- In a second, bigger, mixing bowl, add all the dry ingredients: Flour, baking soda, salt and cinnamon. Mix well.

- Fold the apple & nut mix into the flour mix. If you have big mixing bowls, this will be an easy task. The dough to apple ratio might seem a bit off, but keep folding it until it all becomes smooth. Once it is ready, you can put it in your baking tray and

- Bake for 40-50 minutes. At 40 minutes, check if the middle is cooked through by piercing it with a knife, if the knife comes out clean/almost clean, then it’s good-to-go. If not, cook it 10 more minutes and your cinnamon apple bread bake will be ready!
Let the apple bread bake rest for around 30 minutes and then you can just enjoy it!
One of the biggest advantages of baking is the “home” smell you get after it is done. Our appartment smelled so much like spiced lattes and apples afterwards that I feel I’ll be remaking this apple bread bake or similars in the upcoming weeks.

Cinnamon Apple Bread Bake
Ingredients
- 1/4 cup melted butter
- 3 eggs
- 1/4 cup white sugar
- 1/4 cup brown sugar
- 1 tbsp vanilla sugar
- 5 apples Golden
- 1/4 cup chopped nuts
- 2 cups all purpose flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tbsp ground cinnamon
Instructions
- In a mixing bowl, add the butter, eggs, white, brown and vanilla sugar. Mix well.
- Add the apples and the nuts and fold them into the mix.
- In a separate mixing bowl, add all the dry ingredients: flour, salt, baking soda and cinnamon. Mix well.
- Fold the wet mix into the dry one carefully.
- Place the mix into a baking tray (pre-buttered).
- Bake in the oven for about 40 to 50 minutes.
- Leave it to rest for around 30 minutes before eating it.
