Summer is almost over and the hectic rhytm of the work schedule is going to hit us soon. It already hit me and I have the worst holiday nostalgia right now. But this last recipe I had scheduled before going on holidays truly is the best antidote against those busy nights & holiday nostalgia: this 15 minute vegan creamy mushroom gnocchi is not only easy and fast but also extremely delicious & cozy.
Today’s recipe is one day later (technical issues yesterday) but it’s still the weekend, so here, a video recipe!
Ingredients to make this vegan creamy mushroom gnocchi?
Easy & pantry friendly ingredients:
- Veggies: Mushroom, spinach, shallots.
- Spices: Black pepper, salt, garlic powder and basil.
- Star of the dish: Gnocchi
- Others: Plant based milk, broth, vegan cheese, butter (vegan), some flour or cornstarch.
How to make this vegan creamy mushroom gnocchi ?
This recipe is extremely easy: Everything gets cooked in the same pan and everything is ready in 15 minutes !
Melt some butter and cook the shallots for a couple of minutes then you can start adding the rest of ingredients in the following order: mushrooms, gnocchi, spices, milk & broth, spinach, cheese and flour. When I say it is easy, I don’t lie.

15 minute vegan creamy mushroom gnocchi
Ingredients
- 2 cups mushrooms
- 1 cup spinach
- 2 shallots
- 2 servings gnocchi
- 1/4 cup veggie broth
- 1/2 cup shredded cheese vegan
- 1 cup plant based milk
- 1 tbsp garlic powder
- 1 tbsp black pepper
- 1 tbsp basil
- Some butter & some flour or cornstarch to thicken the sauce
Instructions
- In a pan, melt some butter. Add the shallots and cook 2-3 minutes.
- Add all the mushrooms and cook for 5 minutes.
- Add the gnocchi and cook at high heat.
- Add the spices.
- Add the plant based milk & a bit of broth. Add the spinach.
- Continue to cook at high heat.
- If the sauce is too thick, add some cornstarch or flour.
- Add the cheese and simmer for 5 minutes.
- Let it rest for a couple of minutes before serving, and enjoy!
Recette en français – Gnocchi crémeux aux champignons
Ingrédients
- 250g champignons
- 1 poignée d’épinards
- 2 échalottes
- 2 portions de gnocchi
- 30ml de bouillon végétal
- 250ml de boisson végétal
- 2-3 poignées de fromage râpé vegan
- 1 cuillère à soupe de: ail en poudre, poivre noir, basilic et un peu de sel selon votre goût.
- Un peu de beurre.
- Un peu de farine ou maïzena pour la sauce.
Étapes
- Dans une poêle, fondre un peu de beurre. Ajouter les échalottes et cuire pendant 2-3 minutes.
- Ajouter les champignons et cuire pendant 5 minutes. Puis on rajoute les gnocchi et on continue à cuire à haute temperature.
- Maintenant on rajoute les épices, le lait, le bouillon, les épinards. On mélange bien.
- Si la sauce n’est pas épaisse, on rajoute un peu de maïzena ou farine. Après, on ajoute le fromage.
- On laisse reposer pendant quelques minutes avant servir et voilà, bon appétit!
